• Phil Collins and Enchiladas

    Today I got a strange urge to cook. I was planning on heading down to Broadway for some tasty food, when all of a sudden the thought of my family's homemade enchiladas came screaming into my mind. My roommate Michael agreed, expressing that he would enjoy tasting the sweet chili spices and so I embarked on a quick shopping spree to get the necessary ingredients.

    You can't buy everything you need to make Miller enchiladas in Canada, but luckily Josh and Grace recently went shopping in the states and brought back the necessary sauce. They're probably panicking right now because I used the sauce on enchiladas tonight, but don't worry friends, I always have an extra can on reserve :) I'll be making enchiladas for you soon enough.

    So I left for the store to pick up cheese, beef, and corn tortillas. Buying corn tortillas in Vancouver is always fun, because in the states, I'm used to paying about 80 cents for 50 tortillas. In the 'couv it costs 2.59 for a pack of eight corn tortillas. That's ridiculous. Outrageous. I bought three packs.

    While I was in Safeway I heard some Phil Collins on the radio and was immediately taken aback by my love for Phil. He always has a special place in my heart, and I decided that I simply HAD to listen to him tonight. Years ago, I liked this girl named 'Christy?' whose dad owned a couple of local gas stations, in which she worked as a cashier. I would often stop by to see her and chat a bit, but I could never figure out how to 'express myself' properly. The plight of an inexperienced 18 year old, I guess. One day I went into the gas station and she was working. When I walked in, she showed me the darndest thing, two tickets for an upcoming Phil Collins concert that some customer had left (wow, the tickets were $40 each, a lot in those days).

    "My big chance," I thought to myself, all I had to do was express my unparalleled love for Phil and then ask her to come with me. Unfortunately, several seconds later a woman came in and overheard us talking, she then promptly claimed the tickets as her own. I knew she was lying, but what was I supposed to do? She took the tickets and now Christy is married and has 9 kids or something. Oh well.

    Anyway, I bought my ingredients and headed home, immediately downloading a greatest hits album of Phil from a website similar to itunes. I then proceeded making my meal. Shortly thereafter my roommate Joash came home, and noticed me, listening to Phil and cooking by candlelight. I told him I was having a "date with myself," and he commented that yeah it really looked that way. He was interested in some singing lessons, which I denied him due to my focus on the "date" at hand. It's ok though, he'll get tasty enchiladas tomorrow and I'm sure he won't feel that peeved.

    It's now 12:46 and the enchiladas are done. I didn't eat any of them, saving it for tomorrow. The weird thing is that I love cooking so much that I don't always associate it with eating as it were. Not to worry though. Those enchiladas will be devoured as soon as the sun rises tomorrow, and I'm sure they won't make it to the end of the day. – dan

    Dan- Thanks for the shout out. I’ll be counting on enchiladas from you since you put it in writing. :) I really like that the link from “Josh and Grace” goes to some old asian couple. A very accurate portrayal of us I think.
